As the name Edomae sushi suggests, it is a sushi preparation style that spread throughout Japan In the Edo period.

It utilizes traditional preservation techniques to bring out subtle flavors, such as umami, using seafood caught in Tokyo Bay.

While valuing this tradition,  I don’t only use fish from Tokyo Bay.

I buy the most delicious seasonal fish, without restrictions like particular sources or brands.

Edomae sushi was originally the culture of the common people in the Edo period.

In the past, I imagine people felt free to have a good time and enjoy conversation while eating delicious sushi.

Even though times may change, I wish to provide a place to relax and enjoy a similar good time.
